Tonight is our anniversary and I'm going to make it again. As a first course, we made Caramelized leek soup, also in the files here, and it was a great starter. Bring to a simmer and cook for about 20 minutes until the parsnips are tender. This is the second time we've made this dish, and surely not the last time either! With so many choices of what to make, a recipe must really stand out to make it into the repeat file. Place the chopped parsnips and garlic in a saucepan with enough water to cover.

The parsnips were a lovely addition to a terrific and easy dish. I mashed them rather than blended to give them more texture. The parsnips were a great alternative to potatoes. Cover and simmer over medium-low heat until parsnips are tender and most of liquid has evaporated, about 30 minutes. Simmer: Place into a medium saucepan, cover with water, add two teaspoons of salt. Add some dry white wine or light red wine to add some dept and some fresh rosemary. The sauce is a tiny bit thin so let it reduce a little.
